what type of tomatoes to use is also very important. Plum tomatoes work well.

no, leave it for at least 2 and half hours, adding water occasionally, especially if you add meat to it.

 

you forgot the very important ingredient of olive oil.

anchovies? I guess that's a thing. Only use ones that are in pure olive oil. (not in vegetable oil)

 

the rule of Italian cooking: everywhere in Italy has different recipes for everything. No two people will ever tell you to make a dish named the same in the same way.

 

If I have tomatoes to add to the sauce I will score the skins, drop them whole into the cooking sauce for about a minute, fish them out with a big spoon, let them cool briefly (so I don't burn my hand). Then the skins will come off with very little work.

Then I put them in a food processor so that they get ground up and pour that back into the sauce. You could also use a potato masher, but the food processor works very well.

 

I don't add any cheese. If I want that later I'll add it when I eat the sauce.

 

some people add green or red pepper, or even onions.

too much oregano will make a much different sauce.

too much basil? I don't think you can have too much basil in it.

Some people put the garlic in as whole cloves and then fish the cloves out before they serve it. I like to cook it so long that all the vegetables I add just dissolve.

you can also add carrots, just make sure you grind them or chop them up really fine.

celery can also be added, but that changes the flavor a lot.
