the pealing of the tomatoes is not easy to accomplish without knowing the various secrets of how to do it easily.

what type of tomatoes to use is also very important. Plum tomatoes work well.

no, leave it for at least 2 and half hours, adding water occasionally, especially if you add meat to it.

the rule of Italian cooking: everywhere in Italy has different recipes for everything. No two people will ever tell you to make a dish named the same in the same way.

 

If I have tomatoes to add to the sauce I will score the skins, drop them whole into the cooking sauce for about a minute, fish them out with a big spoon, let them cool briefly (so I don't burn my hand). Then the skins will come off with very little work.

Then I put them in a food processor so that they get ground up and pour that back into the sauce. You could also use a potato masher, but the food processor works very well.

 

I don't add any cheese. If I want that later I'll add it when I eat the sauce.

 

some people add green or red pepper, or even onions.

too much oregano will make a much different sauce.

too much basil? I don't think you can have too much basil in it.

Some people put the garlic in as whole cloves and then fish the cloves out before they serve it. I like to cook it so long that all the vegetables I add just dissolve.

you can also add carrots, just make sure you grind them or chop them up really fine.

celery can also be added, but that changes the flavor a lot.

ROME — Secretary of State Mike Pompeo recently published a sharp letter excoriating the Vatican’s plans to renew an agreement with the Chinese government on Church operations in China. He promoted the article in a tweet, concluding, “The Vatican endangers its moral authority, should it renew the deal.”

 

An indignant Vatican took the article more as a calculated affront than a diplomatic gesture. The friction broke into the open on Wednesday as Mr. Pompeo arrived in Rome and met with prelates and others who are hostile to Pope Francis, while the Vatican denied him a meeting with the pontiff and rebuffed his efforts to derail the deal with China.

 

“Pompeo asked to meet” the pope, who turned him down because Francis had “clearly said that he does not receive political figures ahead of the elections,” Cardinal Pietro Parolin, who, as secretary of state, is the Vatican’s second-ranking official, told reporters.

 

But to some observers on both sides of the tensions between the Roman Catholic Church and the Trump administration, Mr. Pompeo’s visit is as much about the coming presidential election as about China policy. Mr. Pompeo dismissed that suggestion as absurd, but intended or not, his trip signals that President Trump is on the side of those conservative American Catholics who worry about the church’s direction under Francis and think he is soft on China.

 

Francis and Mr. Trump, who have exchanged sharp words in the past, present starkly different visions on issues ranging from the environment to immigration to the threat of populism. In appealing to the Vatican’s support for religious freedom as a reason to drop its China agreement, Mr. Pompeo seemed to seek common ground, but in a way that upset the pope’s chief allies and delighted his chief critics.

 

Cardinal Parolin said Mr. Pompeo’s article had caused “surprise” at the Vatican, because this visit to Rome by the secretary and the meetings with high officials at the Holy See had already been in the works and would have been a “more opportune” forum for airing grievances. The Government Digital Service (GDS) was warned by the Cabinet Office and the National Cyber Security Centre (NCSC) that its One Login digital identity system had “serious data protection failings” and “significant shortcomings” in information security that could increase the risk of data breaches and identity theft.

But when, soon after, an MP wrote to the Cabinet Office to enquire about potential issues around the information security of One Login, GDS did not mention any of the warnings in its response.

 

According to claims by a whistleblower, many of the security problems that were reported have yet to be resolved.

 

One Login is the government’s flagship system for securely accessing online public services, and underpins the Gov.uk digital wallet and the digital driving licence launched by technology secretary Peter Kyle in January this year as part of his new government digital strategy.

 

The whistleblower – who Computer Weekly has agreed not to name, but who has many years of cyber security experience and worked in a senior information security management role at GDS – first warned GDS leaders of serious cyber security problems with One Login in July 2022.

He says his warnings were not heeded, forcing him 18 months later to write to his MP to highlight the issues, citing the 1998 Public Interest Disclosure Act, which protects civil servants who whistleblow about situations they believe to be in the public interest. He was subsequently informed by GDS that he would face disciplinary action.

 

As a result of his initial warnings, then GDS chief executive Tom Read found out that development work on One Login had been offshored to Romania, without his knowledge or approval and without first seeking advice from the NCSC.

 

The whistleblower claims that some of the security failings he identified have still not been addressed, and as a result, the information security of the three million users of One Login remains at risk.

 

He cites over two-and-a-half years of reluctance from the GDS digital identity team to fully address his concerns.
