you are almost correct… aspergillus niger is the fermenation agent
but the bulk of US (world) production uses sucrose (cane/beet sugar) as the feed stock
and your IMPLIED premise, that the citric acid is somehow "tainted" by the aspergillus, is laughably naive and ill-informed
