Been to TW a few times. Don't EVER call them Chinese! And always remember - they don't speak "chinese" in TW. They speak mandarin. And this only began happening after the 1940's. Some still speak in ancient traditional TW language Hokkien or Hakka, and the three languages are often a hodge-podge. To be safe, just refer to their language as "Taiwanese".
What's really good there is the French food. There are French restaurants everywhere. European French, not Cajun.
