I skipped the day care thing as it was localized,

All in all you got that, however don't forget that less is more sometimes. Newer bakers often notate everything, and it gets bloated with the same information bread after bread etc.
I like to think in terms of less is more, but thats my style.

Do you have notepad ++ or ultra edit opened ??
I would recommend getting notepad++ makes it easier. Can have multiple tabs, but ultimately what works for you is best.
Go to the catalog in coms and practice doing several breads. I don't think coms has captchas but you can fine tune there really well.
Seriously, if we can get you baking it would be great. We need moar for sure, bakers that bake when the board is cold and Q isn't around are the bomb IMO.
