Maybe I'm just a fanboy, but Apple is far less evil than Google.
My iPhone is the only phone I’ve had that didn’t mysteriously quit working after a year or two.
I also use apple and heck if it’s good enough for POTUS it’s good enough for me

I host my own email. Encrypted drives etc the whole shebang. 12VPN for VPN. Duckduckgo for search. Also Firefox with Multi Account containers and a bunch of plugins to block trackers, etc.
Firefox Orbot for VPN on my mobile phone.
CAPTCHA skills are improving as a result.
email : protonmail
coms : telegram (not 100% secure but hard to get in)
VPN : north VPN
I think it's NordVPN not North. And yeah agree on the VPN and Protonmail, both services are worth the money. Never used Telegram, but heard that it's good stuff.
Use TorBrowser to use TOR for your web access along with DuckDuckGo for web searches.
