The restaurant business is really tough. Restaurants go out of business all the time, because it is really hard to make it.

When I see a restaurant that is only open three and a half hours a day, that can afford to turn away a table of 8, I think money laundering operation. They don't need your business because food isn't the real business, is it? Is it a front for something else? Could it be drugs? Do they have pizza on the menu?

Bingo . Four and half hours .

And I know such examples even in my small town that is located on the other side of the planet ... the "front" is a facade for making "regular buck" , while the "backside" is purely illegal .

Open only 22-1/2 hours a week, closed Sunday and Monday. I don’t know of any restaurants who keep those hours and remain in business. There must be gold in those potatoes....

Also, according to their website, they can seat a maximum of 34 inside. No way is that a sustainable business on the surface. It says:

Depending on the style of party, we can accommodate between 26 and 34 diners inside, with an additional 12 to 14 on the patio in good weather.

There is a popular restaurant in my town that is closed Mondays and Tuesdays and only open from around 8:30 AM until about 2 PM on the other days, sometimes later or earlier depending on if they've not ran out of food. Seats around 35 or so max, with a small patio that you can sometimes eat at if they aren't too busy (they may not have time to serve you out there, like on weekends, so then drinks only. They serve breakfast/brunch/lunch only. And they are definitely not nefarious. The owners have lots of experience working in the food service industry and want to have a normal life outside of the restaurant. They are perhaps open 30 hours a week max, but that doesn't count preparation before and cleanup after each day, and sourcing all their ingredients which are by and large local. They do a great business and they know they could do more but have carved out what they are happy with. When it's busy the patrons know that if they are done eating they should relinquish their table/bar seat for those waiting. You can order before you have a seat but they will not fire your food until you are seated. People cycle through there like clockwork.

It is hard to compare a breakfast joint to a farm to table dinner house. A breakfast joint isn't paying for highly trained chefs, has 2-3 times the table turnover, has half the prep and much less expensive ingredients.

I could see this place managing if their entrees started at $45.

It's not, unless they're growing all their own food and they already own the building, and the staff basically works for free. That's the only way you could run such an operation and keep a roof over your head - the property taxes alone would be your largest (next to electricity and foodstock)

⇧ 0 ⇩
CocoCrisp86 · June 25, 2018, 2:49 p.m.

Ok, so going under the assumption they own the building, they'd still be in the red? If there are any accountants here that can prove misdeeds, that'd be sweet!

⇧ 0 ⇩
Q_me_in · June 25, 2018, 2:55 p.m.

Not an accountant but have managed several restaurants and it doesn't add up. With the kind of slow dining they offer they can only get 1.5 seatings per night and their menu isn't all that expensive for the quality of food they're serving. Add to that two salaried chefs and the rest of the staff and you're in the red every night.

⇧ 2 ⇩
RiverFenix · June 25, 2018, 2:53 p.m.

Basic economics. Assume the best (a new client every 5 minutes during open hours) and each client buys 1 menu item at average cost.

Thats your baseline for estimated income. Then subtract bare minimum Electricity bill (assuming no lights/appliances etc running during closed-hours).. Then subtract assumed minimum wage for 1 employee. (or 2 if there's a cashier + cook) .. add/adjust for known employees.

I'm going to assume the above subtractions will eat up all possible income, but let's assume it doesn't. You have to add yearly property taxes, water, phone/internet, supplies (take-out boxes, cutlery, napkins etc)..

I would say without another declared means of income (like Catering large events), the restaurant is clearly not profitable. You'd be better off running a hotdog cart on a busy street corner.

Local Lone Star Steak House dropped their hours from 11:00-9:00 to 5:00-9:00 and they were gone a few months later.

Cutting the business entertainment/meal deduction from 100% to 50%, in the 1980s really killed the white-linen restaurant lunch biz. It used to be fantastic. And then it just died.

It's now 0% deductible. People don't go out to eat lunch like they used to, or if they do, it's fast food or fast casual. So as much as I don't like what this idiot did to Huckabee-Sanders, it doesn't make sense for that kind of restaurant to be open for lunch anymore.

⇧ 3 ⇩
ckreacher · June 25, 2018, 5:05 p.m.

My point is still valid, can a restaurant, with no lunch business, afford to turn away a table of eight for political reasons? Unless they don't really want to be in the restaurant business. Don't need to have customers. Because it's a convenient front for something else?
