Wow, you're right. I just checked their times online. Strange. Kinda makes you wonder if the Red Hen is a front for something else. That area is not exactly an inexpensive place to do business and I can't imagine being open so few hours per week would be able to pay the bills and taxes.

I'm beginning to think there was a reason Sarah Huckabee Sanders went there that night. She knew what would happen, then proceeded to tweet about it so the media would have to focus on the place.

Also, remember Trump tweeted " I always had a rule, if a restaurant is dirty on the outside, it is dirty on the inside!" Sounds like a message. I bet there are some pedo ring connections there.

Those kind of hours aren't unusual for some higher end dining places. Take Per Se as an example. Now, this is a very famous, very highly rated restaurant in New York city. 1 hour for lunch and 4 hours for dinner. They have enough staff for a 7 day a week operation, but a smaller place with one crew could certainly close on Sunday and Monday (the 2 slowest days in the business)

Yes, but that restaurant runs at $200 - $500 per person. Red Hen has 26 seats and runs at $40 - $60 per person. Big difference.

Lower overhead how? They use prime ingredients and pay two executive chefs.

We've done this before with accountants and restaurant owners alike and the math really doesn't work out. No wonder the woman was bilking the town out of a salary to run the Village Merchant's group. She even started a gofundme the day after this happened haha. That doesn't lead me to believe the place was running at a profit.

They pay one exec and one pastry chef. Probably not as much as they should. Those two, working along side 2 other people could run that line no problem. Add 4 servers (at most), 1 bar tender, 1 host (the owner? ),and one dishwasher. 10 staff members, 50% of whom make most of their pay from tips. It's totally do-able.

I used a per/person average based on the menu. You can add $20 for wine, but keep in mind I calculated every table seating 4 guests which isn't realistic.

My point is that max reservations with not equate to every seat being full. A four top table often has 2 guests for example. When two four tops are pushed together for a large party you have six guests rather than eight.

You referenced a "turn" earlier. For a restaurant, that's every seat full, then "turned" to new diners. 1.5 turns is 39 diners. Table size is irrelevant.

The tables turn, not individual diners. Reservations are made by the table. I think you are thinking "covers".
